It's been a tradition for quite some years in the House of Chaos to make Chex party mix and Cheesecake. The Cheesecake is generally made on Christmas Eve (or the day before) and then eaten on Christmas day. Same goes for the party mix. There's always some for munching on for quite some time if we have the foresight to hide part of it from the MiniUnit. She LOVES that stuff. It's like crack to a junkie, I tell you.
Anyhow, over the last few years, the cheesecake has a twist...
I make one regular sized one and then several of those "mini" sized ones.
It's just fun.

Chex Party Mix is the "original" recipe, right on the box of cereal at Christmas time found here.
I just use vegan versions of butter and Worcestershire.
As for the cheesecake,
it's basically;
3 8oz tubs of vegan creme cheese
1/2 block of drained tofu
1 cup of sugar
1/8 cup oil
a tablespoon of a thickening agent in two tablespoons of water (I usually use cornstarch or arrowroot)
a couple teaspoons of vanilla
and a squirt of lemon juice.
Stick it all in a blender until it's super extra smooth and pour it into a graham cracker crust.
Bake it at 350ºF until the edges start to brown and pull away from the sides...the center will still be jiggly...about an hour.
Turn off the oven and leave it in there until it cools.
Voila.
